I live in Belgium and have loads of Italians in the city where i live, yet my favourite pizzas are from Brasil.
And my alltime favourite is a catupiry/chicken pizza.
Catupiry is a sort of cheese typical for Brasil.
It's hard to find in normal stores, but if you have Portuguese/Brazilian delicatesse store in your city, they will have it.
Toppingrecipe:
-Cook 2 chickenbreasts.
Chop them up into small pieces, fry them a couple of minutes in a pan and add your preferred spices while it's frying (salt, pepper, thyme, oregano, ...).
Add some tomatosauce to the chicken, stir it up and take of the stove. Let it cool for a few minutes.
-Put a thin layer of tomatosauce on your dough and add a layer of your chicken over it.
-Add your catipury over the whole thing. You can play with this, make criss cross patern, drops, smiley faces, ...
-Put it in the prewarmed oven to bake, but turn your topheater a little bit down so you don't scorche the catipury.
Et voila, a typical Brazilian pizza.
