The following is for a pizza with an asian twist.
Ingredients for the tomato sauce:
- 100 ml olive oil.
- 100 grams of chopped red onions.
- 200 ml winevinigar.
- 500 gr tomato purée (e.g. passata di pomodoro).
- 1 glas of medium dry sherry (50 ml.).
- 2 table spoons sojasauce.
- corn flower to thicken the pizza sauce if needed.
Spices for the tomato sauce:
pepper and salt.
Thyme, rosemary, bay leaf, tarragon, majoram (if you can find them, fresh cut spieces are preferred).
Preparation of the tomato sauce:
Frie the chopped red onions in olive oil, just lightly. Then add the winevinigar and 2 tablespoons of sojasauce.
When the mixture is about to boil add the tomato purée and the sherry. Then begin to add the species, the pepper and salt.
Let coock for about 15 to 20 minutes on low heat.
After that thicken the sauce with corn flower if needed. Let coock 10 more minutes.
Let the sauce rest for a day and it will then be ready for the preparation of the pizza.
Topping of the pizza:
- minced meat, preferably porc
- pearl onions
- pineapple cubes
- honey
Preparation of the pizza:
Cover the pizza with the tomato sauce.
Spread some lightly fried minced meat over the pizza.
Decorate your pizza with pearl onions and pinapple cubes. The pinapple cubes should be covered with a little honey.
The pizza is now ready to be backed.
